Ingredients
Baked Clams

large clams, rinsed, sand and grit removed

2 Tbsp minced onion

1/2 cup butter (1 stick)

3 Tbsp chopped fresh parsley

1 Tbsp roasted red peppers

5 drops hot peppers sauce

2 clove garlic, minced

1 Tbsp lemon juice
-
1 Tbsp lemon zest

1 cup bread crumbs

1 cup chicken stock

Salt and freshly ground pepper to taste
How To Prepare

Put clams in a large pan with chicken stock; cook over moderate heat until the shells open.

Remove from the heat and when cool enough to handle, pluck the whole clams from the shells; separate shells in half and save these removed shells

Mix together the butter, hot sauce, lemon, roasted red peppers, garlic, parsley and bread crumbs.

Set each clam back into a half shell and spread a teaspoon of butter mixture on top of each clam in a shell.

Arrange filled shells in a baking dish and bake until lightly browned (about 3-4 minutes).

Serve with lemon, and parsley for garnish
