Ingredients

Baked Clams

  • large clams, rinsed, sand and grit removed

  • 2 Tbsp minced onion

  • 1/2 cup butter (1 stick)

  • 3 Tbsp chopped fresh parsley

  • 1 Tbsp roasted red peppers  

  • 5 drops hot peppers sauce

  • 2 clove garlic, minced

  • 1 Tbsp lemon juice

  • 1 Tbsp lemon zest

  • 1 cup bread crumbs

  • 1 cup chicken stock 

  • Salt and freshly ground pepper to taste

How To Prepare

  1. Put clams in a large pan with chicken stock; cook over moderate heat until the shells open.

  2. Remove from the heat and when cool enough to handle, pluck the whole clams from the shells; separate shells in half and save these removed shells

  3. Mix together the butter, hot sauce, lemon, roasted red peppers, garlic, parsley and bread crumbs.

  4. Set each clam back into a half shell and spread a teaspoon of butter mixture on top of each clam in a shell.

  5. Arrange filled shells in a baking dish and bake until lightly browned (about 3-4 minutes).

  6. Serve with lemon, and parsley for garnish
