240g Egg Whites

120g Sugar

170g Sugar

2 Tsp Vanilla Extract

280g Ground Almonds

40g Cake Flour
How to Prepare
-
Whip the egg whites until foamy, then gradually at the 120g sugar and continue to whip until they hold a firm peak.

Combine the 170g sugar, ground almonds and cake flour.

Fold into the whites then add the vanilla extract
-
Fill a piping bag with a plan tube and pipe into a large disc onto a parchment lined baking tray

Bake at 360F for 25-30 minutes

Remove from oven and cool completely.

Line the disc into a piece of acetateto form a cake circle base
-
Pipe or spread your mousse over the sponge and set it in the fridge to chill.
