Dacquiose

  • 240g Egg Whites

  • 120g Sugar

  • 170g Sugar

  • 2 Tsp Vanilla Extract

  • 280g Ground Almonds

  • 40g Cake Flour


How to Prepare

  1. Whip the egg whites until foamy, then gradually at the 120g sugar and continue to whip until they hold a firm peak.

  2. Combine the 170g sugar, ground almonds and cake flour.

  3. Fold into the whites then add the vanilla extract

  4. Fill a piping bag with a plan tube and pipe into a large disc onto a parchment lined baking tray

  5. Bake at 360F for 25-30 minutes

  6. Remove from oven and cool completely.

  7. Line the disc into a piece of acetateto form a cake circle base

  8. Pipe or spread your mousse over the sponge and set it in the fridge to chill.
