Ingredients
Smoked duck

1 Duck Breast, Boneles

20ml Maple Syrup

50 g Kosher Salt

30 g Brown Sugar

1g Dried Thyme

4g Black Whole pepper
Apple Chutney

85g Brown Sugar
-
70g Fine Diced Onion
-
60g Golden Raisins
-
30g Walnuts, Toasted & Chopped

30g Cider Vinegar
-
1/2 ea Lemon Juice
-
20g Grated Ginger
-
1 clove Minced Garlic
-
1g Mace
-
1/2 kg Apples, peeled, cored, & Cut into meidum Dice
How To Prepare
Apple Chutney
-
Combine brown sugar, onion, raisins, walnuts, cider vinegar, lemon juice, ginger, garlic, mace and zest in a sauce pot and let simmer – covered - over low heat for 8 minutes.

Add the apples and let simmer until the apples are very tender, the juices are reduced and slightly thickened (10-15 minutes). Cool and refrigerate until needed.

Score the skin side of the duck

Mix the cure ingredients together and rub into duck breast

Place into a non-reactive container with the remaining cure

Cover and cure overnight
