How To Prepare
Stuffed Chicken Supreme
-
With a paring knife, de-skin the chicken off its end bone (this is called frenched meat)
-
Slice a small opening underneath the frenched bone and stuff with spinach and ricotta cheese
-
Season chicken with oil, butter, cumin, garlic, Montreal chicken, salt, and pepper
-
In an oven, cook chicken for 45 minutes, then sear chicken skin side down on frying pan until golden and crisp
Roasted Potatoes

Cut potatoes and rub with oil, paprika, garlic, oregano, parsley, salt and pepper.

Place potatoes on a baking pan and cook for 45 minutes
Heriloom Carrots

Peel and cut carrots into batonnet then into medium-sized dice
-
Blanch carrots for 3-5 minutes
-
Sautee carrots for 5 minutes with butter, adding salt and pepper to taste
