How To Prepare
Lobster Tail

Place the lobster head-first, facing away from you into boiling salted water and cook for 5 minutes

Let the lobster simmer for 6 minutes

Remove the lobster from the water, then crack the shell open and gently remove the meat
-
Slice the meat as desired and arrange on plate
-
Add parsley sprigs for garnish and top with vanilla beurre blanc
Vanilla Beurre Blanc

Add scraped vanilla beans, shallots, wine and lemon to a pot and reduce by half
-
Slowly stir in pieces of diced butter, one at a time
-
End result should look like a thick cream
