Lobster Tail

  • 2 Lobsters

  • 1 Shallot, Brunoise

  • 1/2 Vanilla Bean, Scraped & Split

  • 2 tbsp Butter

  • 1 Lemon, juiced

  • 120m White Wine

  • 1/2 Bunch Parsely

How To Prepare

Lobster Tail

  1. Place the lobster head-first, facing away from you into boiling salted water and cook for 5 minutes

  2. Let the lobster simmer for 6 minutes

  3. Remove the lobster from the water, then crack the shell open and gently remove the meat

  4. Slice the meat as desired and arrange on plate

  5. Add parsley sprigs for garnish and top with vanilla beurre blanc

 

Vanilla Beurre Blanc

  1. Add scraped vanilla beans, shallots, wine and lemon to a pot and reduce by half

  2. Slowly stir in pieces of diced butter, one at a time

  3. End result should look like a thick cream
