Smoked/Gravlax Salmon

1 Side Salmon, Fresh

180 g Salt

150 g Sugar

1/2 Bunch Dill, Fresh

30 g Black Peppercorns

30 ml Brandy

30 ml Vodka
Cucumber Salad
-
1/4 Cucumber, peeled
-
1 ea Green Onion, Chopped

30 ml Soy Sauce
-
15 ml Sesame Oil
-
60 ml Rice Vinegar
-
15 g Sugar
-
10 g Salt
-
10 g Black & White Sesame Seed, Toasted
How To Prepare
Smoked/Gravlax Salmon

Gather and prepare all the ingredients to begin the cure

Place the salmon skin side-down on a plastic wrap
-
Spread the cure evenly on the salmon and drizzle with alcohol
-
Wrap the salmon around and lay it down in a hotel pan. Let it cure for 3 days
Cucumber Salad
-
Combine all ingredients and let stand for 1 hour

Lightly press and drain the liquid from the salad

Sprinkle toasted sesame on the salad
