Ingredients

Smoked/Gravlax Salmon

  • 1 Side Salmon, Fresh

  • 180 g Salt

  • 150 g Sugar

  • 1/2 Bunch Dill, Fresh

  • 30 g Black Peppercorns

  • 30 ml Brandy

  • 30 ml Vodka

Cucumber Salad

  • 1/4 Cucumber, peeled

  • 1 ea Green Onion, Chopped

  • 30 ml Soy Sauce

  • 15 ml Sesame Oil

  • 60 ml Rice Vinegar

  • 15 g Sugar

  • 10 g Salt

  • 10 g Black & White Sesame Seed, Toasted

How To Prepare

Smoked/Gravlax Salmon

  1. Gather and prepare all the ingredients to begin the cure

  2. Place the salmon skin side-down on a plastic wrap

  3. Spread the cure evenly on the salmon and drizzle with alcohol

  4. Wrap the salmon around and lay it down in a hotel pan. Let it cure for 3 days


Cucumber Salad

  1. Combine all ingredients and let stand for 1 hour

  2. Lightly press and drain the liquid from the salad

  3. Sprinkle toasted sesame on the salad
